Spinach Looks Beautiful & Works Beautifully, Too
Sowing
Spinach is best started by sowing seeds directly outdoors as soon as the soil is workable in early spring. Use a well-draining potting mix and plant seeds about 1/2 inch deep. Temperatures between 50-60°F give the best results.
Growing
Thin sprouts to about 12 inches apart and let each unfurl its lush leaves! Spinach loves cooler temperatures and prefers partial to full sun, flourishing in moist, well-drained soil.
Winter Work
Spinach can tolerate cooler temperatures, and with proper mulching or a cold frame, it can even continue to grow through mild winters.

Thought to have originated in ancient Persia approximately 2,000 years ago, spinach became a popular early spring crop in England in the Middle Ages due to the scarcity of fresh local vegetables at that time of year. It was referenced in the first English cookbook, The Forme of Cury, in 1390, where it appeared under names such as “spinnedge” and “spynoches.”
